Apple’s patent also mentions an electronic device enclosure with a temperature sensing system that includes a temperature sensor and a differential temperature probe. The system works by calculating the difference between the two ends of the probe.
One end touches the surface to be measured, while the other is connected to the temperature sensor. The voltage difference at different ends of the probe can then be compared with differential temperature measurement. The patent goes on to explain in detail how the temperature measuring hardware works.

The documents explain how a special temperature sensor inside the device can be used to monitor the temperature of a component like the processor, while saying that the sensor can be used to measure the absolute temperature of an external surface like the skin.
